The Kitchen Supervisor assists the Sous Chef and Executive Chef and manages the Kitchen Utility Workers. This position will assume the general responsibilities of the Sous Chef in his absence.

Primary Duties and Responsibilities:

  • Manages the Kitchen Utility Workers to include hiring, overseeing the day-to-day work, providing feedback and training, and all aspects of performance management including termination.
  • Creates and manages a standardized process for establishing and maintain an accurate inventory of food stock and supplies. Conducts a monthly inventory and reports inventory levels to Executive Chef and General Manager of Food and Beverage.
  • Maintains proper inventories for all food service events.
  • Responsible for one or more sections of the kitchen operation, as directed by the Executive Chef.
  • Follows and enforces the use of standard recipes and preparation guidelines according to Straz policies and procedures.
  • Follows and enforces high standards of cleanliness, safety, and health rules according to the Health Department and Straz Center.
  • Ensures the proper storage of all goods in the store room, walk-in cooler, and walk-in freezer.
  • Makes recommendations for menu selection.
  • Gives directions to kitchen staff in Sous Chef's absence.
  • Assists in serving prepared food, as instructed by the Sous Chef and Executive Chef.
  • Prepares and sets up hot and cold plates as directed by the Sous Chef and Executive Chef.

Minimum Qualifications (Knowledge, Skills, and Abilities):

  • Ability to work well in a fast-paced environment.
  • Must have knowledge of kitchen procedures and functions.
  • Be able to work in a standing position for long periods of time (minimum of 5 hours).
  • Be able to safely lift and maneuver up to 25 pounds.

Education and Work Experience:

  • Culinary degree or the equivalent.
  • Minimum of four years experience in fine dining operations or volume food preparation with multiple food outlets.
  • Previous supervisory experience required.
  • ServSafe certified.
